This is what you make once your Friendship Bread starter has done its 10-day magic and you’re ready to turn it into something you can actually eat.

Oatmeal joins the starter along with brown sugar, oil, eggs, and a double dose of warm spices (cinnamon and nutmeg) for a tender quick bread that’s somewhere between a coffee cake and a sweet breakfast loaf. The starter gives it a subtle tang that balances the sweetness, and the oats add texture and heartiness. Just stir everything together, pour into a pan, and bake until golden.

Perfect for breakfast, afternoon snacks, or gifting to the friend who gave you the starter in the first place.

Kitchen Tips

  • Don’t overmix once you add the dry ingredients or the bread will be tough
  • Check early since ovens vary; it’s done when a toothpick comes out clean
  • Cool completely before slicing for the cleanest cuts
  • Wrap tightly and it’ll stay moist for several days on the counter

Dave

The crack it from the bread rising, you could make a couple of cuts (slashes) into the bread before putting into the oven to control where the bread opens up as it rises. I think it looks great the way it is.

I am wondering if anyone has made sourdough starter without using yeast. I want to do it the old fashioned way when yeast was created from food. Please let me know if you've done and how. Also I want to use gluten free fours. Thanks.
