Apple banana bread is what you make when one lonely banana is going black on the counter and an apple or two is past its snacking prime. It is a quickbread that splits the difference between traditional banana bread and a chunky apple loaf, with sour cream pulling everything into a moist, tender crumb.

The sour cream is doing real work here. Just three tablespoons adds tang, fat, and acidity that activates the baking soda and keeps the loaf moist for days. Skip it and the bread leans drier and flatter.

Use a firm baking apple like Honeycrisp, Braeburn, or Granny Smith and chop it into roughly ½ inch pieces. Smaller and the apple disappears into the crumb. Larger and you get steamy pockets that throw off the texture.

Fold the chopped apple and walnuts in last with a light hand. Overworking the batter at this stage develops gluten and bakes up tough.

  • The riper the banana, the better. Brown-spotted or even fully black skins mean more sugar and stronger banana flavor.

Directions

Preheat oven to 350℉.

Cream butter and sugars, and beat in eggs. Stir in sour cream, banana and vanilla.

In separate bowl, combine flour, baking powder, soda and cinnamon.

Gradually add to butter mixture. Gently stir in apples and nuts. Spoon into greased bread pan and bake 1 hour.
