Boxed granola can’t touch this, and the reason is the produce drawer. A diced Granny Smith apple goes right into the mix, baking down into tart, chewy bites you almost never get from a store version. It plays against sweet dried cranberries, buttery pecans, and crunchy pumpkin seeds for clusters with real texture.

The sweetener is worth noting too: brown sugar and maple syrup warmed with olive oil into a glossy syrup that coats every oat evenly, so the granola bakes up golden instead of pale and patchy.

The single most important step comes after the oven: let it cool completely on the pan. Granola is soft and slightly tacky while warm and only crisps as it cools. Pull it too soon or store it warm and you trap steam, leaving the clusters chewy instead of crisp.

Directions

Preheat oven to 300 degrees. Line a baking sheet with parchment paper.

Mix together oats, pecans, cranberries, pumpkin seeds, apple, cinnamon, and salt.

Warm sugar, syrup, and olive oil over low heat until sugar dissolves.

Fold syrup mixture into oat mixture.

Spread granola over lined baking sheet. Bake until dry and golden, 30 to 35 minutes.

Stir gently a few times during baking.

Cool to room temperature before storing in an airtight container.

For a delicious twist, reduce the maple syrup to ¼ cup and add ¼ cup of orange juice or orange marmalade, depending on if you prefer a sweet or tangy granola.
