Egg noodles get tossed with beaten eggs, melted margarine, and chunks of fresh apple, then baked until the edges turn crispy and the center stays soft and custardy.
Cinnamon and vanilla add warmth, while plump raisins deliver little pockets of sweetness.
Pro Tips
- For extra richness, add 2 more eggs to make it even softer and more custardy
- Rinse raisins in hot water before adding so they stay plump and don’t dry out during baking
- Swap apples and raisins for crushed pineapple plus extra sugar and cinnamon for a tropical twist

Directions
Cook and drain noodles and put in a large bowl. Stir in margarine and eggs. Peel and chop apples. If using raisins, rinse in hot water and drain.
Combine all ingredients together, add seasoning and mix well. Preheat oven to 350℉. Pour kugel mixture into a greased 9” x 13” baking pan. Bake for 40 to 60 minutes or until lightly browned.
Makes 12 servings. Note: for extra softness, add another 2 eggs.
Variation: Pineapple Kugel Replace apples and raisins with one 16 oz can crushed pineapple..Add an additional ½ to ¾ cup of sugar and 1 tablespoon cinnamon.
