2 hrsSome retro appetizers earn their permanent spot on the party table, and these are one of them. Crunchy water chestnuts get wrapped in bacon, baked until the bacon crisps, then bathed in a sweet-and-tangy glaze that makes them impossible to stop eating.
The appeal is all about contrast. The water chestnut stays cool, crisp, and juicy inside its salty, savory bacon wrapper, a texture that catches everyone off guard in the best way. A quick stovetop sauce of brown sugar, Miracle Whip, and chili sauce, heated until glossy, glazes them with an addictive sweet-savory-tangy hit.
A couple of practical notes from the method: soak the toothpicks first so they don’t scorch in the oven, and drain off the rendered bacon fat before saucing so the bites glaze up sticky instead of greasy. They’re a make-ahead appetizer built for a crowd.
Kitchen Tips
- Soak the toothpicks in water first so they don’t burn during the long bake.
- Drain the rendered bacon fat before adding the sauce, so the bites turn out sticky-glazed, not greasy.
- For extra-crisp bacon, partially cook it before wrapping, since the water chestnuts need no real cooking.
Variations
- Wrap chunks of pineapple or whole chestnuts alongside for a sweet-savory mix.
- Add a splash of soy sauce or a pinch of cayenne to the glaze for a rumaki-style or spicier edge.
