This is banana pudding that went full send.

Forget vanilla wafers. This version layers crushed Oreo cookies and sliced bananas with a rich, from-scratch custard made from a dozen egg yolks, milk, sugar, and vanilla. Whole Oreos line the sides of the dish for a dramatic presentation.

The meringue on top, whipped from the dozen remaining egg whites, gets browned in a hot oven until golden and billowy. It’s a full production, but the kind that makes people put down their phones and pay attention to dessert.

Pro Tips

  • Stir the custard constantly in the double boiler. It thickens gradually and scorches quickly if ignored
  • Layer while the custard is still warm so it soaks into the crushed cookies and softens them
  • Spread the meringue all the way to the edges of the dish to seal it, or it will shrink and weep

Directions

Preheat oven to 450 degrees.

Combine sugar, flour, salt, yolks and milk; cook in double boiler until thick. Remove from heat and add vanilla.

In a 2 or 3 quart dish, layer crushed Oreo cookies, bananas and custard, making several layers.

Line sides of dish with whole cookies, layer with remaining ingredients.

Meringue: Beat whites until peaks form. Add vanilla and sugar. Spread on pudding; bake until browned.
