Chewy oatmeal slice with desiccated coconut and golden syrup baked until golden on the edges and soft in the middle. Just 7 ingredients and one bowl. Proper Aussie baking at its finest.

If you grew up anywhere near Australia or New Zealand, you already know this slice. It’s the one that showed up at every school fete, every afternoon tea, every “I just need something sweet and I’ve got 10 minutes” moment.

Rolled oats, desiccated coconut, and raw sugar get bound together with melted butter and a sticky spoonful of golden syrup, then baked until the edges go chewy-crisp and the middle stays soft.

Slice it while it’s still warm or it’ll crack on you.

It’s dead simple, dead reliable, and dead good.

Kitchen Tips

  • Slice while warm! Once it cools completely, cutting clean pieces becomes tricky.
  • Swap golden syrup for honey or treacle if that’s what you’ve got in the pantry.
  • Press the mixture firmly and evenly into the pan for uniform slices that hold together.
  • Store in an airtight tin at room temperature for up to 5 days (if they last that long).

Directions

Combine flour, oats, coconut, sugar and egg.

Melt butter and add golden syrup, then pour over combined ingredients and mix.

Spread over flat baking dish (about ½-inch thick), and cook for 25 to 30 minutes at 350℉ (180℃).

Slice when warm.
