Fine egg noodles get tossed with sour cream, cottage cheese, eggs, sugar, and golden raisins, then baked in a 9×13 dish until custardy and golden on top. It’s rich, it’s creamy, and it feeds ten people without breaking a sweat.
The beauty of this recipe is how forgiving it is. Add a squeeze of lemon for brightness. Separate the eggs and whip the whites for an airier texture. Or skip the sugar, sour cream, and raisins entirely for a savory salt kugel that pairs with chicken or brisket.

- Savory salt kugel: Omit the sugar, sour cream, and raisins. Serve alongside roast chicken or braised beef.

Directions
Cook the noodles according to the directions on the package, drain well.
Add the other ingredients and mix until combined.
Put into a 9 x 13 baking dish (greased) and bake at 350℉ (180℃) for an hour.
Never fails.
You can serve with fruit (fresh) or put pie filling over it.
Try putting some sour cream on top.
Enjoy You can incorperate the egg yolks and beat the whites for a very light texture.
I sometimes add a bit of lemon juice.
This is a very forgiving recipe.
If you leave the sour cream, sugar and raisins out, you have a wonderful salt kugel to serve with chicken or beef.
