Homemade caramel turtle candies with pecan halves, melted caramels thinned with whipped topping, and a semi-sweet chocolate shell. Three ingredients, no thermometer.

40 minTurtle candies are one of those treats that look like they came from a candy shop but take about 30 minutes at home. Three pecan halves arranged like a head and legs, a spoonful of melted caramel over the center, then a coat of melted chocolate on top. That’s it.
The whipped topping stirred into the caramels is the trick that makes these easy. It thins the melted caramel to a smooth, spooning consistency without adding water (which can make caramel seize) or cream (which requires careful tempering). Two tablespoons is all it takes to turn stubborn candy squares into a pourable caramel sauce.
Leaving the pecan ends visible is both practical and visual. Those exposed nuts give you something to grab when picking them up, and the contrast of dark chocolate, golden caramel, and toasted pecans peeking out is what makes turtles look so good on a candy tray.
Kitchen Tips
- Melt the caramels over hot water (double boiler), not direct heat. Direct heat scorches caramel fast and turns it bitter.
- Let both the caramel and chocolate cool slightly before spooning. Too hot and they run off the pecans instead of pooling on top.
- Lightly grease the cookie sheet or use parchment paper. Caramel sticks to bare metal and you’ll shatter the turtles trying to pry them off.
- Work quickly once the caramel is melted. It thickens as it cools and becomes impossible to spoon.
Variations
- Dark chocolate version: Use dark chocolate chips instead of semi-sweet for a richer, more bittersweet finish.
- Sea salt turtles: Sprinkle a few flakes of Maldon sea salt over the wet chocolate for a sweet-salty candy shop treat.

Directions
Combine caramels and whipped topping and heat over hot water, stirring until mixture has belted and it is smooth and well blended.
Let cool slightly.
Place pecan halves on a lightly greased cookie sheet in of a turtle’s head while the other 2 pecan halves are in the position of the turtle’s legs on each side.
Carefully spoon the melted caramels over each group of 3 pecan halves, leaving the ends of the pecan halves showing.
Let sit until hard.
Melt chocolate chips over hot water, stirring until smooth.
Let cool slightly.
Spoon melted chocolate over caramel topping on pecan the turtles.
Let sit until hard.
