California dreaming on a dinner plate. These crisp-tender carrots get a burst of sunshine from fresh orange zest and juicy orange sections, finished with a hint of scallion and Butter Buds for that buttery taste without the fat.

Ready in 30 minutes flat, this is the kind of effortless side that makes roast chicken or grilled fish sing.

The citrus brightens up the natural sweetness of the carrots in a way that feels both wholesome and a little bit fancy.

Kitchen Tips

  • Slice the carrots evenly (about ¼ inch thick) so they cook at the same rate.
  • Use navel oranges for easy sectioning and the sweetest, juiciest bite.
  • Don’t overcook the carrots. Crisp-tender is the goal here so they hold their own against the soft orange segments.
