When it’s just the two of you and you want something warm and filling without a mountain of leftovers, this is your recipe.

Cooked ground beef and rice get stirred into a quick sauce of tomato soup and milk, then poured into a baking dish and blanketed with shredded mozzarella.

Forty minutes later, you’ve got a bubbly, cheesy casserole that tastes like it took way more effort than it did.

Kitchen Tips

  • Brown and drain the beef well so the casserole doesn’t end up greasy
  • Day-old rice works even better here since it’s drier and soaks up more of the tomato sauce
  • Double the recipe and use a 9×13 pan when you need to feed a bigger crowd

Directions

In large bowl, combine soup, milk and parsley; stir to blend.

Stir in rice, beef and onions.

Turn into a 10 x 6 inch pan.

Sprinkle with mozzarella cheese.

Bake at 350℉ (180℃) F for 30 minutes.
