Cherry pineapple jam combines pitted sweet cherries and crushed pineapple in an old-fashioned sun-finished preserve. Just three ingredients, no pectin needed.

Pitted cherries and crushed pineapple get cooked with their weight in sugar, then poured into shallow platters covered with glass and left in direct sunlight to thicken to syrupy preserves.
The sun-finishing method is genuinely old-school. Sunlight does two things: it evaporates excess moisture and lightly cooks the fruit through the glass cover, intensifying both the color and flavor. The glass keeps insects and dust out while the sun does its work over several hours or days.
Use sweet cherries for a milder jam, or sour cherries for a tarter, jammier result. The crushed pineapple brings natural enzymes and acid that help the jam set, plus its own tropical sweetness that plays beautifully against the cherry.
The equal-weight sugar formula is what makes this jam shelf-stable. Less sugar and you risk mold and fermentation. More just makes it sicky-sweet without improving keeping qualities.
Watch the simmer carefully during the 45-minute stove cook. The mixture should reduce by about a quarter and pass the wrinkle test: a spoonful dropped on a chilled plate should wrinkle when pushed with a finger.
Kitchen Tips
- Pit cherries with a proper cherry pitter, not a knife. You’ll lose half the fruit otherwise.
- Place the sun-drying platters where they get at least 6 hours of strong direct sunlight. Cloudy days extend the time considerably.
- Stir the platters once or twice during sun-drying to prevent a skin forming on top.
- Process finished jam in sterilized jars for long-term storage, or refrigerate for up to a month if not canning.
Variations
- Add 2 tablespoons of fresh lemon juice with the fruit for a brighter, more set jam.
- Swap half the pineapple for fresh chopped strawberries for a summer berry version.
- Stir in 1 teaspoon of finely grated ginger near the end of cooking for a warm, spicy edge.

Heat slowly to boiling.
