Flavored gelatin dissolves in boiling water, vanilla ice cream melts right into it, and the silky mixture gets spooned into a springform pan lined with ladyfingers.
A few hours in the fridge and it sets into something light, creamy, and wobbly in the most charming way.
Top it with whipped cream and fresh fruit for a showstopper that takes about 15 minutes of actual hands-on work.
Pro Tips
- Choose a bold gelatin flavor like black cherry or black raspberry. The color contrast against the pale ladyfingers and white whipped cream makes it gorgeous.
- Trim the ladyfingers so they stand evenly around the pan with the rounded side facing out. That’s what gives it that bakery-window look.
- Let the gelatin mixture thicken in the fridge until it’s the consistency of unbeaten egg whites before pouring. Too thin and it won’t set properly around the ladyfingers.

Directions
Completely dissolve gelatin in boiling water.
Add ice cream by spoonfulls, stirring until completely melted.
Chill until thickened but still spoonable.
Meanwhile, trim off about 1 inch of the ladyfingers and place cut ends down around side of 8 inch springform pan.
Have rounded sides of ladyfingers facing outside of pan.
Spoon thickened gelatin mixture into pan.
Chill until firm, about 3 hours.
Remove side of pan.
Garnish with whipped topping, fresh fruit and mint leaves if desired.
