Whisk together an egg and sugar, stir in heavy cream and milk, then fold in chopped chocolate-covered mints. Pour it into your machine and let it churn. That’s genuinely it.
Serve it straight from the machine for a soft-serve texture, or freeze it firmer and layer it in parfait glasses with chocolate syrup drizzled between scoops for a real showpiece.

- Chop the chocolate mints into small, uneven pieces; the variety of chunk sizes means surprise hits of mint in every scoop
- Chill the base mixture in the fridge for 30 minutes before churning for a creamier, smoother result

Stir in cream and milk.
Stir in chocolate covered mints pieces.
Freeze according to manufacturer’s directions.
Garnish with additional mints. Makes 1 pint.
NOTE: Good way to serve is to serve in a parfait glass with layers of chocolate syrup in between ice cream.
