Five ingredients and an ice cream maker are all that stand between you and a pint of creamy, minty, chocolatey frozen bliss.

Whisk together an egg and sugar, stir in heavy cream and milk, then fold in chopped chocolate-covered mints. Pour it into your machine and let it churn. That’s genuinely it.

Serve it straight from the machine for a soft-serve texture, or freeze it firmer and layer it in parfait glasses with chocolate syrup drizzled between scoops for a real showpiece.

Kitchen Tips

  • Chop the chocolate mints into small, uneven pieces; the variety of chunk sizes means surprise hits of mint in every scoop
  • Chill the base mixture in the fridge for 30 minutes before churning for a creamier, smoother result

Directions

In small bowl, whisk together egg and sugar.

Stir in cream and milk.

Stir in chocolate covered mints pieces.

Freeze according to manufacturer’s directions.

Garnish with additional mints. Makes 1 pint.

NOTE: Good way to serve is to serve in a parfait glass with layers of chocolate syrup in between ice cream.
