40 minSwap raisins for dried cherries in an oatmeal cookie and everything changes. The cherries bring a bright, tart sweetness that cuts through the buttery brown sugar dough in a way raisins never could. Each bite has that satisfying chew from the oats and a fruity pop from the cherry.
This dough is generously buttered and loaded with brown sugar, which gives the cookies a rich caramel flavor and soft, chewy centers. Cinnamon and nutmeg add warm spice notes that complement both the oats and the cherries without overpowering either.
Quick oats work better than old-fashioned here. They absorb more of the dough’s moisture, which creates a denser, chewier cookie rather than one with big, dry oat flakes sticking out. The cookies spread slightly during baking, giving you thin, crispy edges that taper into a thick, soft middle.
Pulling them at the “lightly golden” stage is key. They’ll look underdone on the sheet but firm up during the one-minute cool-down. Overbaked oatmeal cookies go from chewy to crunchy in a flash.
Pro Tips
- Cream the butter and brown sugar for at least 3 minutes until truly light and fluffy. This step builds the chewy texture.
- Chop larger dried cherries in half so they distribute more evenly through the dough.
- Don’t flatten the dough mounds. Let them spread naturally for the thickest, chewiest centers.
- Store in an airtight container. A slice of bread in the container keeps them soft for days.
Variations
- Add white chocolate chips alongside the dried cherries for a sweet-tart combination.
- Use dried cranberries if you can’t find dried cherries, though the flavor will be sharper.
- Fold in chopped toasted pecans for a nutty crunch in every bite.
