Fiesta sloppy joes with ground beef, Mexicorn, tomato soup, chili powder, and hot sauce served over warm split biscuits. A Tex-Mex spin on the classic weeknight sloppy joe.

Take a regular sloppy joe, swap the bun for a warm flaky biscuit, add Mexicorn and chili powder, and suddenly you’ve got a Tex-Mex weeknight dinner that kids will actually ask for again. The ground beef filling is saucy, slightly spicy, and loaded with corn and peppers from the Mexicorn.

Condensed tomato soup is the sauce base, which keeps the ingredient list short and the prep time minimal. Mixed with water, chili powder, and a dash of hot sauce, it thickens into a clingy, tangy coating for the beef without needing any separate sauce-making.

Serving over split biscuits instead of hamburger buns is the move that makes this work. The biscuits soak up the saucy filling from the bottom while staying flaky on top, giving you a textural contrast that soggy burger buns can’t match.

Kitchen Tips

  • Drain the ground beef well after browning. Excess grease will make the filling oily and the biscuits soggy on the bottom.
  • Simmer the filling for the full 10 minutes. The sauce needs time to reduce and thicken so it clings to the meat instead of running off the biscuit.
  • Time the biscuits so they come out of the oven right when the filling is ready. Hot biscuits absorb the sauce better and taste noticeably better than lukewarm ones.
  • Adjust the hot sauce and chili powder to your family’s spice tolerance.

Variations

  • Top with shredded cheddar cheese and a dollop of sour cream for full Tex-Mex style.
  • Use ground turkey for a lighter filling.
  • Serve over cornbread squares instead of biscuits for a Southern twist.

Directions

Heat oven to 375℉ (190℃).

Bake biscuits as directed on can.

Meanwhile, in large skillet brown ground beef, bell pepper and onion, drain.

Stir in remaining ingredients.

Bring to a boil. Reduce heat, cover and simmer 10 minutes or until thoroughly heated.

To serve, split warm biscuits, place 2 halves on each plate.

Spoon hot beef mixture over biscuit halves.
