20 minThis ginger peach parfait layers creamy vanilla pudding with fresh peaches and a warmly spiced whipped topping in individual glasses. The ginger, cinnamon, and nutmeg get folded directly into the whipped topping, so each cool, creamy layer carries a subtle spice warmth that plays off the sweet peaches.
The pudding cooks in the microwave instead of on the stovetop, which keeps this a quick, low-effort dessert. Stir it a few times during cooking to prevent lumps, then fold in the peaches while it’s still warm so they soften slightly and release their juices into the pudding.
Layering matters here. Two rounds of pudding and whipped topping in each parfait glass gives you that striped look and ensures every spoonful gets a bit of everything. Chill until the pudding sets firm, then serve.
Kitchen Tips
- Use ripe, fragrant peaches. If they don’t smell like anything at the store, they won’t taste like much in the parfait either.
- Dice the peaches small so they distribute evenly through the pudding layer and fit neatly on a spoon.
- Let the pudding cool slightly before layering. Hot pudding will melt the whipped topping and blur those clean layers.
- Assemble at least an hour before serving so everything sets and the flavors meld.
Variations
- Fresh ginger: Grate a tiny bit of fresh ginger into the whipped topping instead of ground for a sharper, more vibrant ginger hit.
- Mango swap: Replace peaches with ripe mango and add a pinch of cardamom to the spice blend for a tropical spin.
- Crunchy layer: Add crushed gingersnap cookies between the layers for texture contrast.
Ingredients
Directions
In a medium bowl, blend the pudding mix and milk.
Microwave at high (100%) for 4 to 6 minutes or until slightly thickened, stirring two or three times during the cooking.
Stir in the peaches and cover with plastic wrap.
Chill until set. Blend the spices into the whipped topping.
In each of 4 parfait glasses, layer ¼ cup of the pudding mix, 3 tablespoon of the whipped topping.
Then layer another ¼ cup of the pudding mix on top of the whipped topping and 1 tablespoon of the topping.
Repeat in the remaining 3 glasses.
