Katherine Hepburn was bold, brilliant, and unapologetic, and her brownie recipe is exactly the same way.

Unsweetened chocolate melted with butter forms a rich, dark base. Sugar, eggs, vanilla, and just a quarter cup of flour keep these brownies dense, fudgy, and deeply chocolatey with none of that cakey nonsense. A full cup of coarsely chopped walnuts adds crunch and earthy contrast.

Hepburn’s own instructions say to “beat it all like mad," then “let it cool, cut into squares, and go crazy." Hard to argue with a four-time Oscar winner.

Kitchen Tips

  • Melt the chocolate and butter together over low heat, stirring constantly; scorched chocolate is bitter and grainy
  • Don’t overbake: pull them at 40 minutes even if the center looks slightly underset; they firm up as they cool
  • Line the pan with parchment paper for clean, easy removal
  • For the fudgiest texture, use the full cup of walnuts; they create pockets of moisture in the batter as it bakes

Directions

Preheat the oven to 325℉ (160℃).

Butter an 8-inch square baking pan.

In a heavy saucepan, melt the chocolate with the butter over low heat, stirring until completely melted.

Remove from the heat and stir in the sugar.

Add the eggs and vanilla and “beat it all like mad".

Stir in the flour, salt and walnuts and mix well.

Spoon the batter into the prepared pan and bake for 40 minutes.

Take it out; let it cool; cut into squares and go crazy.

i prefer to use low fat yogurt in my recipes rather then fat butter or marg lowers the calories then

BEST.... BROWNIE RECIPE.... EVER! Super easy, fudgey and perfectly moist! I threw some chocolate chips in the batter and make it even richer(Not that it needs it, I'm just crazy :P)
