1 hrsMaple syrup in banana bread is a quiet trick that pulls the loaf in a more interesting direction than the standard versions. The maple adds a subtle caramel and woodsy note that plays against the ripe banana, and the brown sugar piles on more of that same molasses depth. Two complementary sweeteners working in the same direction instead of fighting each other.
This is a straightforward quickbread otherwise. Cream the margarine (or butter) with the brown sugar, beat in the eggs and mashed bananas, add maple and milk, then stir in the dry ingredients. Optional mix-ins make the loaf customizable: walnuts for crunch and tannin, chocolate chips to push it toward dessert, or raisins for sweet chewy pockets. A dusting of confectioners’ sugar after the loaf cools is a small touch that makes a big visual difference.
Pro Tips
- Use bananas that are completely covered in dark spots. Yellow ones lack the sweetness and softness needed for banana bread.
- Cream the margarine and brown sugar thoroughly until lightened. Skipping this step gives a dense, heavy loaf.
- Use real maple syrup, not pancake syrup. Pancake syrup is mostly corn syrup with maple flavoring and tastes flat in baked goods.
- Test with a toothpick at 40 minutes. Some ovens run hot and overbaked banana bread dries out fast.
- Wait until the loaf is fully cool before dusting with powdered sugar. Warm bread melts the sugar into a sticky glaze.
Variations
- Add chopped walnuts and cinnamon for a more spiced version.
- Swirl Nutella through the batter before baking for a chocolate-hazelnut surprise.
- Substitute butter for the margarine for richer flavor and a more golden crust.
