40 minThe mini Oreo brownie pizza is the kind of dessert kids lose their minds over, and honestly adults sneak seconds too. A boxed brownie mix gets a whole package of mini Oreos folded into the batter, then it’s pressed into a pizza pan and baked into a giant round brownie with cookies embedded throughout.
The real showstopper comes in the final minutes. A blanket of mini marshmallows goes on top and returns to the oven just long enough to puff and turn golden at the edges, then chopped walnuts, candy-coated peanut butter morsels, and the reserved Oreos get pressed into the softened marshmallow while everything is still warm, locking them in place.
Sliced into wedges like real pizza, it’s the ultimate birthday party dessert, potluck showstopper, or Saturday afternoon rainy-day baking project.
Kitchen Tips
- Grease the pizza pan generously or line it with parchment. Marshmallow and brownie edges stick mercilessly.
- Watch the marshmallow bake carefully, 3 minutes for pale and soft, 5 minutes for golden and toasty. Any longer and they turn brown and hard.
- Press toppings into the marshmallow the moment it comes out of the oven, within 30 seconds the marshmallow sets and toppings slide right off.
- Cool slightly before slicing, a pizza cutter works better than a knife once it’s firmed up.
Variations
- Swap Oreos for chocolate chip cookies or chopped Reese’s peanut butter cups.
- Drizzle the finished pizza with melted chocolate and caramel sauce for a full dessert-pizza bar experience.
- Use peppermint candies and crushed candy canes for a winter holiday version.
