3 hrsThese no-bake bars are built in layers like a candy bar. Club crackers line the bottom of the pan, a boiled brown sugar and graham cracker filling goes over them, more crackers on top, and then a melted chocolate and peanut butter layer finishes everything off with crushed peanuts on top.
The filling is the glue that holds it all together. Margarine, milk, both sugars, and graham cracker crumbs get boiled for five minutes, which thickens the mixture into a sticky, toffee-like layer that soaks into the crackers slightly while holding its shape between them.
Three hours in the fridge sets the whole thing firm enough to cut into clean bars. They’re crunchy, chewy, and chocolatey all at once, and they store in the fridge for days without losing their texture.
Kitchen Tips
- Boil the sugar mixture for the full 5 minutes. Undercooking leaves the filling too thin to set properly, and the bars will fall apart when you cut them.
- Pour the hot filling over the first layer of crackers quickly and spread evenly. It sets fast.
- Melt the chocolate chips and peanut butter together gently. Microwave in 30-second bursts, stirring between each, to avoid scorching.
- Use a sharp knife dipped in hot water to cut clean bars. The chocolate layer cracks if you saw through it cold.
Variations
- Butterscotch version: Swap the semisweet chocolate chips for butterscotch chips for a sweeter, caramel-forward topping.
- Pretzel base: Replace the bottom layer of crackers with thin pretzel crisps for a salty-sweet contrast.
