Six ingredients and ten minutes in a hot oven. That’s all it takes to get a crispy, golden crust on cod, sole, or flounder without a drop of deep-frying oil. The coating is a mix of cornmeal, flour, grated Parmesan, and Cajun seasoning, which gives you crunch, nuttiness, and a touch of heat all at once.

The cornmeal is what makes the texture work. It stays gritty and crunchy even in the oven, unlike a flour-only coating that just turns soft. The Parmesan browns and crisps alongside it, adding a savory depth that plain breadcrumbs can’t match.

A light drizzle of oil over the top before baking is the key to getting that fried-food crunch without actually frying. The high oven heat crisps the coating from above while the fish steams gently underneath, staying flaky and moist inside.

Kitchen Tips

  • Pat the fish completely dry before dredging. Moisture on the surface prevents the coating from sticking and leads to a soggy crust.
  • Use a hot oven and don’t open the door. The high heat is what crisps the coating quickly. Opening the door drops the temperature and you lose that golden finish.
  • Don’t flip the fish. One side gets the crispy coating, the bottom stays tender against the pan. Flipping risks breaking the delicate fillets apart.
  • Cajun seasoning varies widely by brand. Taste yours first. Some are very salty, so adjust the added salt accordingly.

Variations

  • Lemon-herb version: Skip the Cajun seasoning and use ½ teaspoon dried Italian herbs and a pinch of lemon zest for a milder, Mediterranean flavor.
  • Panko upgrade: Replace the flour with panko breadcrumbs for an even crunchier coating while keeping the cornmeal base.

Directions

Combine flour, cornmeal, cheese, and spices.

Dredge fish in mix.
