These no-bake peanut butter balls are the kind of treat you can make with kids in about 30 minutes. Raisins get steamed until plump, chopped, and mixed into peanut butter with powdered sugar, cinnamon, a squeeze of lemon juice, and a pinch of salt. Roll them into small balls and coat in toasted coconut.

Steaming the raisins first is a step you don’t want to skip. Plumped raisins are softer, juicier, and easier to chop. Dry raisins stay tough and chewy in the finished candy, pulling away from the peanut butter instead of blending in.

The lemon juice is a sneaky-smart addition. It brightens the heavy peanut butter and keeps the sweetness from being flat and one-note.

Kitchen Tips

  • Toast the coconut in the oven, not the stovetop. A moderate oven gives you even, golden color. Stovetop toasting burns the bottom while the top stays white.
  • Watch the coconut closely. It goes from golden to burnt in under a minute. Pull it the moment it turns light brown.
  • Chop the raisins after steaming. Plumped raisins cut cleaner and distribute more evenly through the mixture.

Directions

Plump raisins by steaming.

Drain and chop.

Roll coconut into fine pieces.

Toast to a light brown in moderate oven (370 degrees F).

Shape into small balls. Roll in toasted coconut.
