This is meal prep meets Mediterranean street food. Sirloin steak marinates in red wine vinegar, Worcestershire, garlic, and oil right in a freezer bag, then goes straight into the freezer until you’re ready to cook. Thaw, grill to medium-rare, slice thin against the grain, and stuff into warm pita bread with crisp lettuce and a cool cucumber yogurt sauce.

Slicing against the grain is key with sirloin. It shortens the muscle fibers and turns what could be a chewy bite into something tender enough to eat in a soft pita without a fight.

The cucumber sauce is just grated cucumber folded into plain yogurt. Simple, but it pulls everything together with a cool, tangy freshness that cuts the richness of the grilled beef.

Kitchen Tips

  • Marinate the steak in the freezer bag so it absorbs flavor while it freezes and again as it thaws. Double the marination time, zero extra work
  • Grill to medium-rare and no further. Sirloin dries out fast past medium, and thin-sliced overcooked steak in a pita is not a good time
  • Squeeze the grated cucumber gently before mixing with yogurt. Too much moisture makes the sauce watery
  • Warm the pitas on the grill for 30 seconds per side so they’re pliable and easy to stuff

Variations

  • Greek style: Add crumbled feta, sliced red onion, and chopped tomato to the stuffing
  • Spicy version: Stir harissa or sriracha into the cucumber yogurt sauce for heat
  • Chicken swap: Use boneless chicken thighs with the same marinade for a lighter option

Directions

Place steak in ziploc freezer bag, combine red wine vinegar, Worcestershire sauce, salad oil and crushed garlic cloves, add to meat. Freeze. Bundle with: 6 pita breads. To prepare, thaw steak in marinade. Prepare cucumber sauce. Thaw pita breads and heat. Barbecue or grill under oven broiler until medium rare. Slice steak against the grain in thin strips. Tear thin strip from edge of pita breads; open and stuff with steak and shredded lettuce, add cucumber sauce. Cucumber sauce, peel and grate cucumber; mix with yogurt. Chill until ready to serve.
