How to store and restore sourdough starter, AKA levain.

Sourdough starter can be held for up to about a month in the refrigerator. Store 1 to 2 cups of remaining starter in a glass bowl or plastic zipper bag, coat with a film of water, cover or seal tightly and refrigerate.

Directions

Restoring Day 1

Remove the stored started from the refrigerator.

Into a suitably sized bowl or container add:

  • 200 grams sourdough starter
  • 100 grams whole wheat flour
  • 400 grams white flour
  • 400 grams warm water (90F, 30C)

Mix together with a wooden spoon or by hand until fully incorporated.

Cover and let rest at room temperature overnight.

Restoring Day 2

Discard all but 100 grams of the starter and add:

  • 100 grams whole wheat flour
  • 400 grams white flour
  • 400 grams warm water (90F, 30C)

Mix together with a wooden spoon or by hand until fully incorporated. Cover and let rest at room temperature.

The starter is ready to use when it has doubled in size or in approximately 5 hours depending on the temperature of your kitchen.
