Strawberry Pound Cake

A buttery bundt pound cake with a tight, tender crumb, crowned with sweetened whipped cream and fresh sliced strawberries. Simple from-scratch baking at its finest.

80 minSome cakes try too hard. This one doesn’t need to. A straightforward butter pound cake with four eggs, real butter, and vanilla gets baked in a bundt pan until golden and firm.
The crumb is dense in all the right ways, with that classic pound cake chew that holds up beautifully under a generous pile of sliced strawberries and freshly whipped cream.
A whisper of orange zest on top is optional but worth every bit of effort it takes (which is almost none).
Chef Tips
- Sift the flour and baking powder together three times as directed. It makes a real difference in how light the crumb turns out.
- Alternate adding the dry and wet ingredients, starting and ending with flour, to keep the batter smooth and prevent overmixing.
- Let the cake cool in the pan for a full 5 minutes before turning out. Too early and it’ll stick; too late and steam makes it soggy.
- In a pinch, skip the whipped cream and just dust with powdered sugar for an equally lovely presentation.

Beat the eggs until foamy.
In separate bowl, combine butter and sugar and beat until light and fluffy.
Blend in beaten eggs and stir until thoroughly combined.
Set aside.
Combine flour and baking powder.
Sift together 3 times.
Gradually add flour mixture alternately with the milk to egg mixture, beginning and ending with flour.
Mix until well combined.
Stir in vanilla.
Lightly oil and flour a 10-inch bundt pan.
Pour in cake batter.
Bake at 350℉ (180℃). for 45 to 50 minutes or until a tester inserted in center comes out clean.
Remove from oven and let stand for 5 minutes.
Remove from pan and cool on wire rack.
Spoon whipped cream sweetened with powdered sugar into center of ring.
Garnish with strawberry slices and orange rind, if desired.
Tips: This cake is also good just sprinkled with powdered sugar.
