A simple, buttery sugar cookie dough gets loaded with candy-coated chocolate pieces, rolled into small balls, and gently flattened with a sugar-dipped glass. They spread as they bake, so each cookie ends up thin, chewy, and studded with colorful candy jewels that catch the light.
Golden edges, soft centers, and a sparkle of sugar on top. These are the cookies that get requested by name at every bake sale and holiday party.
Kitchen Tips
- Keep the dough balls small, about 1 inch. These cookies spread a lot in the oven and larger balls will run into each other.
- Only flatten them slightly with the sugar-dipped glass. Pressing too hard crushes the candy pieces and makes the cookies too thin.
- Let them cool on the baking sheet for a full minute before moving. They’re fragile when hot and firm up as they cool.
Ingredients
Directions
Preheat oven to 350℉ (180℃).
Cream together butter and sugar until light and fluffy; add egg and vanilla.
Combine flour and baking soda; add to creamed mixture just until blended.
Stir in candy bits.
Shape dough into 1-inch balls.
Place on greased cookie sheets about 2-inches apart.
With bottom of a glass dipped in sugar, flatten dough very slightly so as not to crush the candies.
NOTE: Very important to keep the balls of dough small and just barely flattened because these SPREAD out a lot.
Bake 10 to 12 minutes or until edges are light golden; let cool 1 minute before removing to wire racks to cool completely.
Store in tightly covered containers.
