A sharper, more grown-up sloppy joe. This ground beef sandwich swings the flavor pendulum further toward sour than most versions, thanks to a full three cups of apple cider vinegar in the sauce. The sweetness still lands via the brown sugar, ketchup, and honey, but each bite finishes with a clean tart snap that keeps the sandwich from going cloying.

Dijon mustard and Worcestershire add depth that plain sloppy joe mix never touches. Dijon’s horseradish note cuts through the sugar while Worcestershire brings its anchovy-tamarind savoriness to anchor everything.

Browning the beef with onions in a single skillet lets the onion flavor infuse directly into the meat, rather than as a separate layer. Drain the fat before the sauce goes in or the whole thing turns greasy.

  • Use 80/20 ground chuck, not leaner. Too-lean beef dries out during the simmer.

Directions

Combine the ground beef and onions in a large skillet and cook over medium heat, breaking up the chunks with a wooden spoon, until the meat is browned, about 10 minutes.

Drain off the excess fat. In a small mixing bowl, stir together the ketchup, brown sugar, vinegar, Worcestershire, mustard, and honey if using until well combined.

Stir the sauce mixture into the meat and onions and bring to a simmer.

Serve on hamburger buns.
