Ground turkey swapped in for beef makes these sloppy joes leaner without losing the messy, saucy satisfaction that makes a sloppy joe a sloppy joe. Bell peppers and onions sautéed with the meat add crunch and sweetness, and a packet of sloppy joe seasoning mix does the heavy spice work.

The Worcestershire sauce is generous here, and that’s what gives the filling its savory depth. Combined with tomato sauce and the seasoning mix, it creates a tangy, slightly sweet sauce that coats the turkey and vegetables in a sticky glaze after 15 minutes of simmering.

Break the turkey into small crumbles while cooking. Large chunks don’t absorb the sauce as well and make the sandwich harder to eat (and it’s already called “sloppy” for a reason).

Serve on toasted buns. The toasting is key. It creates a barrier that holds up against the wet filling for a few extra minutes before everything soaks through.

  • Use a wooden spoon to break up the ground turkey as it cooks. Turkey clumps more than beef and needs active crumbling.
  • Simmer uncovered for the full 15 minutes so the sauce thickens and clings. Covered simmering keeps it too thin.
  • Toast the buns cut-side down in the same skillet after removing the filling for extra flavor from the drippings.

  • Homemade seasoning: Skip the packet and use chili powder, paprika, garlic powder, onion powder, and brown sugar.

Directions

In a large skillet, heat oil over medium heat.

Add turkey, onions, and bell peppers until meat is no longer pink and vegetables are tender.

Then add seasoning mix, tomato sauce, and Worcestershire sauce; simmer for 15 minutes.

Serve on toasted buns.
