60 minThese harvest squares pack three distinct layers into one pan.
A crumbly butter crust forms the foundation, then sliced apples sprinkled with cinnamon and lemon juice go on next.
After the first bake, a thick coconut-nut custard gets spooned over the softened apples and everything bakes again until golden and set.
Cut them warm for gooey squares or cold for cleaner slices.
Chef Tips
- Press the crust firmly into the pan corners so it doesn’t shrink during baking
- Arrange apple slices in an even layer so the custard topping spreads uniformly
- The custard layer will look wet when you spoon it on but it sets as it bakes
- Let the pan cool at least 15 minutes before cutting or the layers will slide apart
