Six ingredients, one baking dish, and half an hour. That’s the whole story here.

Bulgur wheat gets mixed with dried basil, salt, and pepper, then soaked in boiling water and baked covered until the grains turn fluffy and tender.

A handful of chopped pecans folded in at the end brings a buttery crunch that elevates this from plain grain to something you’ll actually look forward to eating alongside roasted chicken, grilled fish, or a big vegetable stew.

It’s the kind of side dish that quietly makes everything else on the plate better.

Pro Tips

  • Toast the pecans in a dry skillet for a few minutes before adding them. It deepens their flavor significantly.
  • Keep the baking dish tightly covered so no steam escapes. The bulgur needs that trapped moisture to cook through properly.
  • Leftovers make a great base for grain bowls. Toss with roasted vegetables, feta, and a lemon vinaigrette.
