Tender Cornish game hens roasted until golden and glazed with a sweet, savory baste of beef consomme and light corn syrup. Elegant enough for a dinner party, simple enough for a weeknight.

Cornish game hens are one of those dishes that look like you fussed for hours when really they practically roast themselves.

Season them, brush with butter, and let the oven do the heavy lifting while you make a quick glaze from beef consomme and light corn syrup.

That baste goes on during the last stretch of cooking, giving the skin a gorgeous lacquered finish with a hint of sweetness that plays off the savory drippings underneath.

Serve one hen per person for a generous portion, or split them for a lighter meal alongside rice pilaf or roasted root vegetables.

Kitchen Tips

  • Place the hens breast side up on a rack so air circulates all around and the skin crisps evenly.
  • Baste generously during the last 15 minutes to build up that glossy, caramelized glaze.
  • If you want to stuff the hens, use about a quarter cup of stuffing per bird and don’t pack it tight so the heat can reach the center.
