The orange syrup gets built in a skillet - butter, sugar, fresh orange juice, zest, and Grand Marnier cooked down for five minutes until thick and glossy. Banana slices go in for just a minute or two so they warm through without going soft.
Then the syrup and bananas get spooned into the crispy phyllo nests, drizzled with more hot syrup, dusted with powdered sugar, and served immediately. That last part is critical. The hot syrup will soften the crisp phyllo if the dessert sits even a few minutes. Assemble just before serving, not before.
For eight people, this takes 20 minutes and requires almost no skill. It looks like it came from a French bistro.
Chef Tips
- Boil the syrup a full 5 minutes over medium heat before adding the bananas. Under-reduced syrup is too thin and runs through the phyllo instead of coating the bananas.
- Slice the bananas a generous ¼ inch thick. Too thin and they disappear into the sauce; too thick and they don’t warm through in the 1-2 minute cook time.
- Serve immediately after assembling. Every minute the hot syrup sits in the phyllo nest softens the crust further.
Variations
- Rum instead of orange liqueur gives a more tropical, less citrus-forward sauce.
- Add a small scoop of vanilla ice cream alongside each nest for a hot-cold contrast.
- Fresh-squeezed orange juice is worth it here. The fresh zest and juice are central to the syrup’s brightness.

Melt butter in skillet. Add sugar, liqueur or rum, orange juice and zest. Bring to boil. Continue boiling over medium heat 5 minutes or until thickened, stirring occasionally.
Cut bananas in ¼ inch slices. Add to mixture and cook 1 to 2 minutes. Place each Phyllo Nest on dessert plate. Spoon bananas into center of Phyllo Nests; drizzle hot orange syrup all over filo. Sprinkle with powdered sugar and serve with whipped topping. Serve immediately.
