Crispy oven-baked chicken tenders marinated in honey-mustard barbecue sauce and coated in crunchy breadcrumbs. Make 24 pieces for Super Bowl snacking with extra sauce on the side for dipping.

Game day calls for finger food you can eat with one hand while yelling at the TV with the other.

These chicken tenders get soaked in a honey-mustard barbecue marinade for at least an hour (overnight if you plan ahead), then run through a classic three-step breading: flour, egg, breadcrumbs.

Instead of deep frying, they bake on a sheet pan with a generous spray of cooking oil until the coating turns golden and shatteringly crisp.

Reserve half the sauce for dipping and you’ve got a platter that’ll disappear before halftime.

Kitchen Tips

  • Marinate overnight for the deepest flavor; one hour is the minimum
  • Cut larger tenders in half lengthwise so they cook evenly and are easier to eat
  • Whole wheat breadcrumbs add a nuttier crunch, but regular work just as well
  • Flip the tenders halfway through baking and hit them with another spray of oil for an even crisp on both sides

Directions

Mix together barbecue sauce, mustard and honey in a large bowl.

Set aside ½ cup of the sauce in a small bowl.

Cut any large chicken tenders in half lengthwise, then toss all the tenders into the large bowl with the remaining sauce until evenly coat.

Marinate in the refrigerator for at least 1 hour or overnight.

Preheat oven to 450°F.

Spray a large baking sheet with cooking spray.

Whisk flour, salt and pepper in a shallow dish.

Lightly beat eggs in another shallow dish.

Put breadcrumbs in a third shallow dish.

Dip each tender in flour, shaking off any excess.

Dip in egg and allow any excess to drip off.

Then roll in the breadcrumbs, shaking off any excess.

Arrange the tenders on the prepared baking sheet.

Generously coat both sides of each tender with cooking spray.

Bake for 10 to 12 minutes.

Turn each tender over and continue baking until the outside is crisp and inside are cooked, 9 to 11 minutes more.

Serve and dip with the reserved barbecue sauce.
