115 minCaught a couple of trout? This is the recipe that does them justice.
Whole fish get brushed with lemon juice for freshness, then soaked for an hour in a savory marinade of soy sauce, sherry, crushed garlic, and oil.
Fifteen minutes on the grill is all it takes after that, basting with the drained marinade as they cook until the skin crisps and the flesh turns flaky and fragrant.
The soy and sherry give the fish an umami depth that pairs beautifully with the smoky char from the grill.
Simple, fast once marinated, and exactly what a fresh-caught trout deserves.
Pro Tips
- Brush the trout with lemon juice inside and out as soon as you clean them to keep the fish fresh until you’re ready to cook
- Let the fish marinate the full hour so the soy and sherry penetrate the flesh; less time means less flavor
- Use a grill basket or well-oiled grate to prevent the delicate fish from sticking and tearing when you flip
- Baste with the marinade during grilling to build a glossy, savory glaze on the skin
