Ground beef, pearl barley, canned tomatoes, and tomato paste simmer together in one pot until the barley turns plump and tender and the whole thing thickens into a hearty stew. Green pepper and garlic add a savory backbone, and a touch of sugar balances the acidity of the tomatoes.
One pot. About an hour. Leftovers that taste even better the next day.
Kitchen Tips
- Use medium pearl barley for the best texture; quick barley works too but cuts the simmer time to about 15-20 minutes
- Stir occasionally to keep the barley from sticking to the bottom as the liquid absorbs
- This freezes well in individual portions for easy grab-and-go lunches

Directions
In a 4-quart saucepan or Dutch oven, brown ground beef.
Add green pepper, onion and garlic. Cook until onion is tender; drain.
Add remaining ingredients. Bring to a boil. Reduce heat to low; cover.
Simmer 45 to 50 minutes or until barley is tender, stirring occasionally.
Five 1-cup servings *NOTE: To use Quick Barley, substitute 1 cup quick barley for medium barley. Prepare recipe as directed above except simmer 15 to 20 minutes or until barley is tender, stirring occasionally.
