Blueberry Soda Cracker Pie

An old-fashioned blueberry pie that makes its own crust from crushed soda crackers and butter. No pie dough, no rolling pin. Just layer, bake, and serve with whipped cream.

50 minThis is one of those recipes that sounds too simple to be good, and then you taste it and wonder why you ever bothered with pie dough.
Crushed soda crackers get mixed with flour, sugar, and melted butter to form a crumbly, buttery mixture. Half goes on the bottom of the pie plate, blueberry filling spiked with lemon juice goes in the middle, and the rest of the cracker mixture goes on top.
The pie makes its own crust as it bakes, forming crispy, golden layers on top and bottom with that thick, glossy blueberry filling sandwiched between.
It’s the kind of old-fashioned recipe that gets passed around church potlucks and family reunions for good reason. Serve it with vanilla whipped cream or a scoop of ice cream.
Pro Tips
- Crush the soda crackers until they’re fairly fine but not powder. You want some texture, not dust.
- The lemon juice in the filling is doing important work. It cuts the sweetness of the canned filling and brightens the whole pie.
- Let it cool on a rack before slicing. The filling sets up as it cools and the slices will hold together much better.

Combine flour, baking soda, salt, sugar, crackers and melted butter in that order.
Spread ½ of the mixture in a lightly buttered 9 inch pie plate, Cover with blueberry pie filling which has been mixed with lemon juice, and then top with the remaing soda cracker mix.
Bake in preheated 375℉ (190℃) oven for 25 to 30 minutes.
Cool on rack. Serve with lightly sweetened vanilla flavored whipped cream or with vanilla ice cream.
