No-bake chocolate cookies with colorful marshmallows that look like stained glass windows when sliced. Rolled in chopped nuts and chilled until firm. Kids go wild for these.

When you slice into these chocolate logs and see those pops of color peeking through like stained glass, you’ll understand the name instantly.
Melted chocolate and margarine get mixed with corn syrup, then colored mini marshmallows fold in while the chocolate is still warm enough to coat but cool enough that the marshmallows don’t melt. That’s the whole trick.
Roll the mixture into logs, coat them in chopped nuts, and chill until firm. Every slice reveals a mosaic of bright marshmallow “windows” set in dark chocolate.
No oven required. No fuss. Just a showstopper that takes 15 minutes of active work.
Kitchen Tips
- Use colored marshmallows, not white. The contrast against the dark chocolate is what creates the cathedral window effect.
- Let the chocolate mixture cool for about 30 minutes in the fridge before shaping. Too warm and it sticks to everything; too cold and it cracks.
- Wet your hands slightly when rolling the logs. It keeps the chocolate from sticking to your palms.

Heat chocolate and margarine until melted in large saucepan over low heat.
Remove from heat; stir in corn syrup and marshmallows, stirring until coated.
Refrigerate mixture until firm enough to handle, about 30 minutes.
Form into rolls about 2 inches in diameter on waxed paper; roll in nuts.
Refrigerate until firm, 2 to 3 hours.
Cut into scant ½ inch slices.
