45 minWhat if your favorite cheeseburger jumped into a soup pot? That’s basically what happened here.
Browned ground beef simmers with cubed potatoes, onion, celery, and green pepper in a beefy broth, then gets thickened with milk and flour before a heap of shredded cheddar melts right in.
It’s thick, beefy, and cheesy in all the right ways. Pure comfort food for cold nights when a burger alone won’t cut it.
Pro Tips
- Brown the beef well and drain the fat thoroughly for a cleaner-tasting broth
- Whisk the flour into the cold milk before adding it to the pot to avoid lumps
- Add the cheese off heat and stir gently so it melts smooth instead of turning stringy
- Serve topped with crumbled bacon and a handful of diced pickles for the full cheeseburger experience
