The filling is dead simple: melt chocolate chips in warm cream, fold in freshly whipped cream, and pour it into the crust. No eggs, no tempering, no double boiler drama. Just melt, fold, chill.
Three hours in the fridge and it sets into something silky and sliceable. Top it with more whipped cream and chocolate shavings for that holiday table centerpiece look.
Pro Tips
- Stir the chocolate and cream every 30 seconds in the microwave to prevent scorching; it should be completely smooth before you stop
- Cool the chocolate mixture to room temperature before folding in the whipped cream, or the heat will deflate everything
- Stir one-third of the whipped cream in first to lighten the chocolate, then gently fold in the rest to keep it airy
- Make this up to a day ahead; it holds beautifully in the fridge and slices cleaner when fully chilled

TO MAKE CRUST: Process chocolate wafers in blender or food processor to make 1½ cups fine crumbs (or place wafers in plastic bag and crush with rolling pin).
Combine crumbs with butter and vanilla; stir until blended.
Press mixture onto bottom and up sides of 9-inch tart or pie pan.
Bake at 375℉ (190℃). for 10 minutes. Cool on wire rack.
TO MAKE FILLING: Microwave chocolate morsels and ½ cup whipping cream in microwavable bowl on HIGH for 1 to 2 minutes, stirring every 30 seconds until melted and smooth.
Remove from heat; stir in vanilla. Cool to room temperature.
With electric mixer, beat remaining whipping cream on high speed, gradually adding sugar, until soft peaks form.
Stir ⅓ whipped cream into chocolate mixture.
With rubber spatula, gently fold remaining whipped cream into chocolate mixture.
Turn mixture into crust.
Chill 3 hours or until set.
Garnish with whipped cream and chocolate shavings, if desired.
