45 minA cinnamon flop is one of those nearly-forgotten breakfast recipes your great-grandmother probably made without a second thought. It’s barely more than a pancake batter poured into a round baking dish, sprinkled with cinnamon sugar, drizzled with melted butter, and baked until golden. That’s it. No mixer, no fuss, no fancy technique.
The batter is as basic as it gets: flour, sugar, baking powder, an egg, milk, and a pinch of salt. It bakes up into something between a cake and a thick pancake, with a soft, cakey interior and a sweet, buttery cinnamon crust on top. The melted butter drizzled over the cinnamon sugar before baking seeps into the batter and creates pockets of rich, gooey sweetness throughout.
Don’t overthink this one. It’s meant to be humble. The magic is in how the cinnamon sugar and butter melt together on top and form a crackly, caramelized layer that shatters when you break into it with a fork.
Pro Tips
- Don’t overmix the batter. A few lumps are fine. Overmixing makes it tough instead of tender.
- Be generous with the cinnamon sugar on top. It’s the only flavoring beyond butter, so don’t hold back.
- Drizzle the butter evenly over the entire surface. Pooling it in one spot creates soggy patches and dry edges.
- Serve warm, straight from the dish. This is best within the first 30 minutes out of the oven.
Variations
- Top with a simple vanilla glaze (powdered sugar + milk + vanilla) drizzled over while still warm.
- Add sliced apples or blueberries to the batter before baking for a fruit-studded version.
- Swap the cinnamon sugar for brown sugar and a pinch of nutmeg for a warmer, deeper topping.
