Honey is the only sweetener; refined sugar does not appear at all. The result is a muffin that tastes more like banana bread than a bakery cupcake, in the best possible way.
Two teaspoons of cinnamon is the right ratio against the assertive whole wheat flavor. Less and the cinnamon disappears under the wheat tannins. More and it overshoots. The unsweetened applesauce carries the apple notes through the dense crumb without making the batter wet.
A half cup of oil is more than typical bran muffins use, and that is intentional. Whole wheat flour and bran cereal are both thirsty ingredients that turn dry and crumbly without enough fat. The honey adds moisture too, but the oil is what keeps these tender 24 hours later.

- Let the oat bran sit in the wet mixture for 5 minutes before combining with the dry. The grain softens and the muffins lose any gritty texture.
- Use mild honey like clover. Strong varieties like buckwheat overpower the cinnamon and bran.

- Fill cups almost full. Whole wheat batter rises modestly compared to white flour batters, so a generous portion gives proper domed tops.

Preheat oven to 375℉ (190℃). Coat 12 medium-size cups with vegetables oil or line with paper baking cups.
In medium bowl combine Oat Bran cereal, flour, cinnamon, baking powder, soda, and salt. In large bowl combine applesauce, honey, oil, egg, and vanilla. Stir in dry ingredients; mix well. Stir in nuts.
Fill prepared muffin cup almost full. Bake 15 to 20 minutes or until golden brown. Serve warm.
