30 minThis is the weeknight fish dinner that takes almost no effort. Cod fillets get dipped in a lemon-spiked parsley butter, then microwaved until they flake apart at the touch of a fork.
The whole thing comes together in about 30 minutes, start to finish. No preheating the oven, no babysitting a skillet.
The cornstarch in the butter mixture helps it cling to the fish and creates a silky little sauce as everything cooks. Bright, lemony, and satisfying.
Pro Tips
- Arrange thick edges outward. Microwave energy is stronger at the edges of the dish, so placing the thicker parts of the fillets toward the outside ensures even cooking.

Place margarine in 2 quart (12 x 7-inch) glass baking dish .
Microwave on Roast for 2 minutes or until melted. Blend in cornstarch, lemon juice, parsley and pepper.
Dip each fillet in seasoned margarine.
Arrange fillets with thick edges toward outside of dish.
Cover with plastic wrap. Microwave on High for 8 or 9 minutes or until fish flakes easily.
Let stand, covered, 5 minutes before serving.
