This is the weeknight fish dinner that takes almost no effort. Cod fillets get dipped in a lemon-spiked parsley butter, then microwaved until they flake apart at the touch of a fork.

The whole thing comes together in about 30 minutes, start to finish. No preheating the oven, no babysitting a skillet.

The cornstarch in the butter mixture helps it cling to the fish and creates a silky little sauce as everything cooks. Bright, lemony, and satisfying.

Pro Tips

  • Arrange thick edges outward. Microwave energy is stronger at the edges of the dish, so placing the thicker parts of the fillets toward the outside ensures even cooking.
  • Don’t skip the standing time. Those last 5 minutes with the cover on let the fish finish cooking gently without turning rubbery.
  • Swap in real butter if you prefer a richer flavor. The cooking method works exactly the same.
