These old-school Cornflake Cookies are the kind your neighbor brought to every bake sale in the ‘80s, and they still hit the spot.

A whole egg gets creamed into butter and sugar, then mixed with flour, cream of tartar, and a mountain of crushed cornflakes. The batter is thick and chunky, studded with cereal crunch in every bite.

Drop spoonfuls onto an ungreased sheet and bake just 10 minutes at a lower temp for tender cookies with crispy cornflake bits throughout.

Chef Tips

  • Crush cornflakes lightly (not to powder) so you get nuggets of crunch
  • Space cookies 2 inches apart on the sheet for even baking
  • Bake at 325°F for softer cookies; bump to 350°F for extra crispness

Directions

Cream butter.

Add sugar, egg, vanilla; mix well. Stir in flour, cream of tartar, salt, baking soda.

Add corn flakes.

Drop by spoonfuls 2 inches apart on an ungreased cookie sheet.

Bake 10 minutes at 325℉ (160℃).
