70 minSalisbury steak is diner comfort done at home, and the slow cooker makes it weeknight-easy. The patties start with ground beef bound together with onion soup mix and bread crumbs, with a splash of milk to keep them tender instead of dense.
Don’t skip the browning step. Searing the patties in a skillet before they go into the crock builds a savory crust and deep color you’ll never get from the slow cooker alone, and it helps them hold together in the gravy.
The gravy comes together from broth and gravy mix whisked with onions, poured right over the patties so they braise and drink up flavor as they cook. Spoon it all over mashed potatoes or egg noodles and dinner’s done.
Kitchen Tips
- Brown the patties well first; that crust is where the meaty flavor and color come from.
- Handle the beef mixture gently and don’t overwork it, or the patties turn rubbery.
- Flip the patties once partway through so both sides soak up the gravy evenly.
Variations
- Stir sliced mushrooms into the gravy for a classic mushroom-onion version.
- Use ground turkey in place of beef for a lighter take.
- Add a spoon of Worcestershire or Dijon to the gravy for extra depth.
