Whipped egg whites give them their delicate, airy structure while chopped dates and nuts provide all the flavor and chew you could want.

No flour means they’re naturally gluten-free, which makes them a smart addition to any holiday cookie spread.

Drop them by teaspoons and bake low and slow until they turn a gorgeous golden brown.

Directions

Beat egg whites until stiff and dry.

Add remaining ingredients in order given.

Drop by teaspoonfuls onto well-oiled baking sheet.

Bake in slow oven 325℉ (160℃) until delicate brown.

Cool before removing from pan.
