A spiced oatmeal cookie made for anyone watching their sugar, without tasting like a compromise. The trick is letting raisins do the sweetening work. Boiled first to plump them up, they turn soft and jammy, lending natural sweetness and moisture so a sugar substitute can handle the rest.

Hearty oats give the cookies their chewy body and a good dose of fibre, while chopped nuts add crunch and richness.

The warm spice trio of allspice, cinnamon, and nutmeg is what makes these taste indulgent rather than diet, filling the kitchen with a cozy aroma as they bake.

There is no flour here, just oats, so the texture is rustic and tender, more chewy than crisp. Scoop into balls and bake until set. They are a satisfying, lower-sugar snack that won’t spike your afternoon, and they keep well for lunchboxes or a quick bite with coffee.

Kitchen Tips

  • Boil and cool the raisins as directed; plumping them adds natural sweetness and the moisture these flourless cookies need.
  • Use a sweetener that measures and bakes like sugar, and check the package for any conversion notes.
  • These spread little, so flatten the balls slightly if you want flatter cookies.
  • Let them cool on the sheet a few minutes to firm up before moving, since they are tender when hot.

Variations

  • Use walnuts, pecans, or sunflower seeds for the nuts.
  • Add a little grated apple or mashed banana for extra natural sweetness.
  • Swap some raisins for chopped dried apricots or unsweetened cranberries.
