Three ingredients, twenty minutes start to finish, and a bowl of warm, spicy comfort that feels far more elaborate than the effort suggests. Lean ground beef, a small can of tomato sauce, and a packet of brown-bag chili seasoning are the entire shopping list.
The seasoning packet is doing most of the heavy work, so quality matters. Brown-bag style mixes (Carroll Shelby’s, Wick Fowler’s) typically include separate spice and masa packets that let you control thickness and heat exactly to taste.
Masa flour is the thickening trick. Stirred into a slurry with water and added at the end, it gives the chili Tex-Mex authenticity along with body, much better than cornstarch or flour for this style.
Kitchen Tips
- Brown the beef in batches if your pan is crowded. Crowding steams the meat instead of searing it, and seared beef carries more flavor.
- Drain off most of the rendered fat before adding tomato sauce, but leave a tablespoon or two for richness.
- Let the chili rest for 5 minutes off the heat before serving. The flavors deepen and the texture thickens just enough.
Variations
- Stir in a can of drained pinto beans or black beans for a heartier, more filling pot.
- Add a diced onion and a bell pepper sauteed with the beef for fresh vegetable depth.
- Top each bowl with shredded cheddar, diced raw onion, sour cream, and crushed tortilla chips for full Tex-Mex treatment.

Need thickening?
Masa flour gives extra flavor, so mix with water and add slowly.
Hotter and spicier?
Add some or all of small packet of cayenne to suit your taste.
