Easy Raspberry & Mascarpone Cups

This quick and easy dessert inspired by an Italian classic Crema di Mascarpone ai lamponi. Iced fresh raspberries and mascarpone cheese.

Directions
Mix the raspberries and caster sugar in a medium bowl and freeze them for a couple of hours.
Whisk the mascarpone with electric mixers until it softens and becomes very smooth.
Stir the iced raspberry into a slush.
Fold it into the whipped mascarpone.
Spoon into small dessert glasses and freeze until ready to serve.
Decorate with fresh raspberries just before serving.
