The cakes here use a clever trick from old Amish bakers, dissolving cocoa in hot water before mixing it into the batter, which deepens the chocolate flavor and gives the cakes a moist, almost devil’s-food crumb.
Sour milk reacts with the baking soda for extra lift, so the cakes bake up tall and pillowy rather than flat and dense. The filling is a quick whip of shortening, marshmallow cream, powdered sugar, and vanilla. It tastes like the inside of a homemade Twinkie and stays soft even when chilled, which matters because these freeze beautifully.

- Drop batter by rounded teaspoonfuls and leave plenty of space; whoopie pies spread to almost three times their size in the oven.

Mix together all cake ingredients and drop by teaspoon on cookie sheet.

Cream together the filling ingredients and spread between 2 of the cakes.
